Sosa Agar Agar is a Vegetarian gelling agent, heat to 90 degrees and use. Gelling temperature 60 degrees. A versatile, vegetarian gelling agent that gives odourless, colourless semi gels & jellies. Creates a pliable ganache that is heat resistant to 90c and can be melted & reset if desired. It is a type of alga.
- Obtained from red algae, agar-agar is a gelling agent with low elasticity
- Use to make caviar, purees, veils and foams
- Add 2 – 15g of agar-agar powder (depending on desired thickness) to one litre of cold water, then boil to activate
