SOSA Albumina is a powdered self mounting egg white. It is made by spray drying and extracting the parts in the egg white that do not mount. The result is a very practical product that mounts 25% more than a fresh egg white and is 5 times more stable. Great for any application requiring egg whites such as Macaroons, Meringue and Soufflés.
